Cooking under vacuum permits the evaporation of moisture from product at much lower than atmospheric temperatures and thus speeds up the cooking process. At this lower processing temp. the natural flavor, high vitamin, and nutritional content are retained. In addition food darkening and discoloration is prevented.

Groen kettles are used in more Universities and Medical Centers throughout the world for the manufacturing of fly food. Why Groen you ask? Groen is the only self contained kettle manufacturer that has the temperatures to handle high viscosity product. When most manufacturers of kettles have safety cutoff temperatures set at 260 to 265 F, our Groen kettles have a limit of 295 F. This higher temperature enables the kettle to recover quickly once the product starts to absorb the BTU’s of the steam. This causes the product to come up to temperatures quicker than any other kettle manufacturer. In addition the exterior of the Groen units are polished which allows the unit to be easily cleaned. Below is a typical recipe of fly food we find that works well in our kettles. For more information visit the website dedicated to these kettles, www.flylarvaekettles.com.

Fly Food Recipe (Basic)

Autoclave vials/bottles/plugs for packaging of product.

Measure/heat water

Measure/add agar

Measure dextrose, sucrose (Spreckels)

Pre-mix corn flour, nutritional yeast in 500 ml cold water

Add dextrose, sucrose (Spreckels)

Add corn flour, nutritional yeast mixture

Cook Autoclave food

Add Nipagen to food

Dispense, Plug, Label Clean Up

Outside the Bowl is a non for profit organization that is helping end hunger not only from a physical standpoint but also a spiritual one. Here is there story:

In 2005, Jae and Debra Evans moved to South Africa. Not long after, they began a discipleship program with some Xhosa kids in a township called Mbekweni. About 60 kids came. But many were too hungry to hear God*s Word.

Two years later, the couple began feeding kids before the program. The children multiplied. God was working and the Spirit was moving in the Evans.

In 2007, Jae and Debra shared their hearts with a North Coast Church pastor, Chris Brown. He traveled to South Africa. He saw the need. And he quickly took part in the vision. In 2008, the first food center opened in Paarl, South Africa.

It fed 1.5 million people in 2009.

God encouraged the Evans to keep feeding His people. He called them to build more super kitchens and feed the masses in the poorest corners of the earth. Jae and Debra launched an organization that would do that. But their greatest concern isn*t the food being served; it*s the ministry that goes along with it, Outside the Bowl.

Since 2009 Design & Processing Resources Inc. has been building their kitchens using our Groen brand kettles. With kettles is Haiti and now Tijuana it has been a good partnership between the two, helping each other help others.

Recently Schwans Foods purchased two DPR SST-500 gallon steam jacketed kettles with two 500 cooling tanks. Since production was an issue for Schwans to meet the growing demands of their customers, the option to cooling in separate tanks was made. This allows the kettles to empty the current batch into the tanks, then load and start cooking another batch with minimal down time. Normally the cook & chill kettles can do both in the same kettle, however the kettles are the occupied for 60 to 90 minutes while the batches cool.
